Saturday Soup: Easy Taco Soup Recipe

On a cold winter day, I love to just stick some soup in the crock pot for dinner. Nothing is easier than this taco soup. It is great to have for dinner, easy to stick in the fridge to eat later, and freezes well for a quick warm-up dinner in the future.

Easy Taco Soup

1 lb cooked chicken or hamburger
1 can black beans, undrained
1 can kidney beans, undrained
1 can corn, undrained
1 pkg dry taco seasoning mix
1 pkg dry ranch dressing mix
1 small onion
2 cans crushed, diced or stewed tomatoes

Mix all together and simmer 1-2 hours on the stove
, or cook in slow cooker 3-4 hours on high or 7-8 hours on low. I like to top mine with cheese and sour cream, and eat with tortilla chips.

You can use many different kind of beans. I love using a mix of garbanzo beans, any kind of kidney beans (red or white), pinto beans; just whatever you have in your pantry. It's easy to make the recipe bigger by just adding an extra can of beans and tomatoes. Enjoy!
