Lasagna
1 box oven ready lasagna noodles
1 tub cottage cheese (16 oz)
1 egg
1 lb hamburger
1 large jar spaghetti sauce (sometimes I use about 1/4-1/3 of a 2nd jar of sauce just to have enough)
1 lb Mozzarella cheese, grated
Fry hamburger till brown and add spaghetti sauce. Set aside. Add egg to tub of cottage cheese and stir well. Layer in a 9x13 pan as follows:
Thin layer of sauce mixture
½ of noodles
cottage cheese and egg mixture
½ of sauce mixture
½ of grated cheese
other ½ of noodles
other ½ of sauce mixture
other ½ grated cheese
If desired, sprinkle with Parmesan cheese.
I will usually make it the night before so it can sit in the fridge and the noodles soften better. If you do this, take it out of the fridge about ½ hour before putting it in the oven. Cover with tinfoil and bake at 375 for 45 minutes. Let sit about 10 or 15 minutes before serving.
